An experienced hunter pal here in southern Arizona passed on his method for preparing one for the table.  Lay the carcass on a wide board on saw horses and gut, skin and quarter the carcass.  Then throw all that away and eat the board.

well as a fellow arizonan, i would agree!  but my rancher prepared this javalina hours after we shot it.  i will be the first and not the only to say the meat was absolutely delicious!  my 2 hunters are also from arizona and they had the same feelings as your post!  they now want my ranchers method of cooking it!! he did nothing special we could see!! it was fried on a pan!
the only successful javalina i have cooked is in my pit BBQ!
you live and learn!
i would be happy to give the AZ. phone #'s of my hunters in any PM to verify the deliciousness of our meal! 

here is my hunters first mule deer.  found it in a cholla patch not fit for man or beast!
