I really liked the wood fired pizza that Mike prepared over at the Captain's Club. Is he still doing it?

La Esquina isn't bad for a thin crust light pizza.

La Esquina has been gone for some time now.

Colibri, the restaurant in that location for the last couple of years has pizza that my friends rave over.  Last night they had the meat lovers, which is their favorite.

And, yes, Mike is still making pizza.  The Italian is my favorite of Captain’s Club options, though not necessarily my fav pizza in San Carlos.

That is what I meant, is it the crust, cheese, sauce, or toppings? I have found the crust, not to my liking, and the poor quality of cheese.

Mike is famous for burning the pizzas black, then has the audacity to serve them.  He probably gets distracted talking to people or being called away to deal with something inside and lets them burn.
We always specify ‘and don’t burn it!’ when we order pizza there now.

Now that Manuelito no longer is playing there and Mike has wonderful entertainment with the new groups, Captain’s Club is pretty much the only place we go to, other than Froggy’s for karaoke and occasionally Hammerhead’s for The Dudes. We love the new groups, they are awesome! The pizza is good, although I prefer deep dish.

I have an opinion about pizza in SC. Captains Club is best in town and why -he makes his own dough, every pizza I have had was cooked to perfection, he uses wood heat in an oven, his tomate sauce is rich, thick with Italian spices, his ingredients are good quality, number 2 is Hammerheads, their tomate sauce lacks excitement, not much with the Italian spices and not enough of it, I always order double sauce to help the pizza, in third place is Tortuga, average but OK, they try hard, in last place is Mama Mia's now out of business because the pizza was so bad, went their, got my pizza, ate half a slice it was terrible, put the pizza down on the ground, a dog walked over, sniffed the pizza, walked away, what can I say if a dog won't eat it ?!? hahaha

I always found Hammerhead's pizza pretty good and filing. I've always had excellent pizza at Mike's Captain's Club and Colibri. I usually like Jax Snax. Matoni  is one not mentioned ( before Chihuahuas across from Ley's sharing with Sonora Roll) that has always had great pizza.

The only thing wrong with Hammerheads is that they don't put enough sauce on it. I always tell them now to make sure that they put on double sauce and then it's good.

As I said, I order double sauce for the pizza at Hammerheads,  now if you can go deeper, the sauce is the secret in gradient, is it from canned or fresh tomatoes?  Now add the secret herbs and species, that is the bases of a great sauce, let it rest ( ferment ) for 72 hours, then use it on the pizza, all restaurants are different, the secret is in the "sauce", and how much is put on the pizza,.
